Some of my favorite recipes that I know you will love.
Breakfast Casserole
Ingredients
One pound of sausage
Nine eggs
Milk
Salt & pepper
Frozen hash browns or tater tots
Cheese
Bell peppers
Spinach
Directions
Preheat oven to 350 degrees
Crumble and brown 1 lb of sausage in a pan on the stove. When finished, remove from heat.
Whisk 9 eggs and milk in a large bowl with seasonings of choice. I usually just do salt and pepper.
In a 9”x13” pan sprayed with cooking spray, add a layer of frozen hash browns or tater tots.
Add sausage and cheese to pan.
Pour the egg mixture into the dish.
Slice bell peppers and add on top along with spinach.
Cover with foil and bake in oven for 45 minutes. Then remove foil and bake for another 15-20 minutes or until done.
Chicken Salad Sandwiches
Ingredients
Bread of choice — I like whole wheat
Mayonnaise of choice
2 cans of canned chicken (or cooked if you feel like it)
Fruits/vegetables of choice. Here are some of my favorites to use:
Grape halves
Pickle slices
Sliced peppers
Mandarin oranges
Pineapple chunks
Chopped spinach
Celery slices
Directions
Put 2 cans of chicken to a mixing bowl
Add mayonnaise until desired consistency.
Slice grapes (or fruit/vegetable of choice) and add to mixing bowl
Place desire amount on a slice of bread and enjoy your sandwich!
Oven-baked Salmon and Brown Rice
Ingredients
Salmon fillets
Brown rice
Broccoli florets
Salt & pepper
Sesame seeds
Olive oil
Teriyaki sauce
Directions
Bring 2 cups of water to a boil on the stove, then add in 1 cup of brown rice.
Cover, reduce heat, and let simmer for 45 minutes.
Preheat oven to 400 degrees.
Place salmon fillets on a pan, drizzle with olive oil, and season with salt and pepper.
Steam broccoli (or heat however you want).
Once the rice is done, add broccoli, sesame seeds, and teriyaki for flavor.
